Good Evening Y’all! I have been wanting to make gingerbread cookies that are simple and easy to make and after much searching I came across the perfect recipe courtesy of Go Bold With Butter (love their site! check out all of their delish cookie recipes!) and the cookies came out fantastic and incredibly yummy. Oh how the smell of ginger throughout the house really comforts my soul…just amazing. You can find the recipe right here. Enjoy!
Tomorrow is my son’s birthday. It seems like every year in recent memory I have made his birthday cake in the flavor that he loves the most: strawberry. One year, we had strawberry cake, strawberry icing…and to top it off we had strawberry ice cream. Kind of an overload of strawberries, yes? But my son absolutely loves it! So tonight, I made him strawberry cupcakes with cream cheese icing topped with fresh strawberries. He is one special boy and I am so lucky and have been so incredibly blessed to be his mother.
The recipe I used is from Pillsbury and is right here. After I let the cupcakes cool for awhile, I frosted with cream cheese frosting.
I remember as a little girl standing on a stool by my mother’s side and watching patiently while she made peanut butter cookies. I was so happy when she would let me dip the fork in the sugar and then let me do the criss-cross shapes into the cookies…these are precious memories of just me and my mother. My mother wasn’t a culinary genius by all means but wow could she make delicious peanut butter cookies that melted in our mouths every time. She used the Betty Crocker Peanut Butter Cookie recipe (Betty Crocker has been like a family member in our home as you can see throughout my postings!) which is a timeless and traditional cookie recipe. My mother called me last night and we were talking Christmas stuff and I told her I was making our favorite cookie for when she came to visit on Christmas and I could feel her smiling when she said “oh! I can’t wait!”

Tonight we have started the season of Christmas cookie making in our home and what a great cookie to start the season off with: Snickerdoodles! These cookies have truly been a favorite in our home since my boys were little and I even have the same Betty Crocker cookbook that has been with us all of these years – even has smudge prints and notes in the pages from years past. They are so incredibly easy to make in that the recipe consists of the basic staples that we all have in our kitchens (flour, sugar, butter, shortening and cinnamon).
