In honor of my dad today I thought I would share a recipe that he would love. Being that he is a native Vermonter – anything that has anything to do with Vermont and New England is a favorite of his (except for the New England Patriots and Boston Red Sox…my dad has been “Washingtonized”…sorry!) Especially with maple syrup (has to be Vermont Maple Syrup though!) This cake is moist and delicious, enriched in maple syrup and pecans. The cream cheese frosting has maple syrup in the mixture as well. For my dad, I would only use Vermont Maple Syrup but if it’s impossible for you to get to Vermont to pick up some of their fine syrup than any other syrup will be fine.
