Southern Living’s Hummingbird Cake

Hummingbird Cake is a layered cake with bananas, pineapple and pecans and then topped with melt in your mouth cream cheese frosting with a topping of chopped pecans.  The cake was first issued in Southern Living Magazine in February 1978 and is a favorite for cookouts and family / friends gatherings.  I have also used this recipe for cupcakes too.  This cake is rich and its heavenly!
