Chocolate Chip Cookie Baby Cakes
1 cup semisweet chocolate chips
1/2 cup chopped pecans
1/2 cup packed brown sugar
1/2 tsp vanilla
1/8 tsp salt
1 pouch Betty Crocker chocolate chip cookie mix
1/2 cup butter or margarine softened
1. Heat oven to 350. Spray 36 mini muffin pan with cooking spray. In medium bowl, mix chocolate chips, pecans, brown sugar, vanilla, salt and 1 egg until blended. Cover and refrigerate.
2. In large bowl, stir cookie mix, butter and remaining egg until soft dough forms. Shape dough into 36 (1-inch) balls; place in muffin pan. Bake 8 minutes or until edges are set.
3. Spoon chilled chocolate chip mixture evenly over baby cakes. Bake 8 minutes longer. Cool 5 minutes; remove from pans to cooling rack. Cool completely. Sprinkle with powder sugar.
